Virgilio Martínez owns and operates this 6.25 manzana farm in San Pedro Necta, where he grows a mix of varieties, including Bourbon, Caturra, and Catuai. Virgilio is interested in investing more into the technical advancements of his farm, as well as learning improvements to technique and approach to increase his quality and production.
Coffees on Los Chorros are picked ripe and depulped the same day, then fermented dry for 24–38 hours, depending on the weather. The beans are washed multiple times until they are free of mucilage, and then dried on concrete patios for 3.5–6 days, again depending on the weather.

Huehuetenango is located in Western Guatemala bordering Mexico. It is extremely diverse and known for producing some of the best coffees in Latin America due to its climate, altitude, water sources, and traditional varieties. A range of offerings come out of Huehuetenango, including chocolatey volume offerings and fruit-forward microlots.
We are excited to bring this single farm, small lot (less than 800lbs) coffee to our winter releases this year. Each 10oz bag is hand packed and sorted to allow each and every cup of this amazing coffee to shine. Only 150 bags will be produced so get yours while supplies lasts!
**We recommend using whole bean coffee for maximum shelf life, but if you select "Ground" below we will grind orders for standard home drip coffee machines.**

Our non-profit sister company Javesca Feeds, uses a portion of the revenue from Javesca to empower community transformative feeding initiatives around the globe.
Sourced from farms around the world, our beans are chosen every year through extensive cupping, grading, and flavor analysis. Working with farmers, we target each bean to be picked at the peak ripeness, allowing our small batch roasters to develop a complex flavor profiles for our customers.
